Corn Pone Pie

1 Pound Ground Beef
1 Can red beans (drained)
1 TBS Chili powder
1 Can diced tomatoes
¼ Cup chopped onion
¼ Cup chopped green peppers
1 box of Jiffy corn bread mix

Brown ground beef with onion and peppers.
Add and mix ground beef with beans, chili powder and tomatoes
then place in a 8” x 8” or 2 quart casserole pan. Mix the jiffy mix
per directions on box and spread the corn bread batter on top of the
above mixture and spread across the top. Bake in the oven at
350 degrees for 25-30 minutes until brown.

I put a few drops of hot sauce on it as I eat it. One of my favorites.

Glad you enjoyed it. Fills you up and stays with you for awhile. I only post that which my family and I love and fix fairly often. I have a killer chili recepie that everyone loves but I have not posted it here because all the Texans would find fault. [Wink] They would not understand what they are missing. Years ago I spent all winter perfecting that one.

Delicious. We loved it.
We don't use the Jiffy stuff so I used my corn bread receipe. Coudn't find the hot sause so I used packages of Taco Bell Fire sauce.

I love jiffy mixes. a .25 cent box makes the best cornbread i've ever had!

I make something similar to the above, except it's with chili, a lot hotter, and about 5 mins before it's done, i sprinke chedder cubes around the top so they're half melted when you serve. mmmm mmmmm good,
