Smothered Fried Quail, Rabbit, or Squirrel

When game is of uncertain age, roll it in salted and peppered flour. Drop into a Dutch oven containing 1/4 inch of butter. Brown on all sides. Almost cover with boiling water. Cover tightly and simmer until meat is very tender. Thicken gravy with more flour [blend with water to make a paste first] and a little salt. [you can add onions, mushrooms, carrots, garlic, celery and seasonings and serve with grits, rice, potatoes or pasta]
