I am looking for an easy recipe so all this turkey does not go to waste, you can only eat so many sandwiches! I looked up a few things on the net - but they all looked like a lot of work just to make soup. Anyone here have a simple recipe?

Being the lazy thing that I am - yeah, I do have an easy way. [Smile] I just put the turkey (as much as you want to make soup out of) in some water, let it simmer a little to get some flavor, I add chicken broth if it's weak, toss in some veggies, wild rice, regular rice, barley, noodles, or all of the above. Let heat all day and enjoy. Any leftover soup, I freeze in meal sized bowls.
